Wherever you are in the world, eggs are a breakfast classic - and like anything timeless - eggs & their health benefits never go out of style… These breakfasts are a great way to pack in your protein, amino acids and raise good cholesterol !
PREP TIME 5 mins
COOKING TIME 10-15mins
INGREDIENTS

6 eggs
-
6 strips of Bacon
-
1 onion
-
2 garlic cloves
-
1/2 cup of mushrooms
INSTRUCTIONS
-
Crack the eggs into a bowl and beat with a fork until thoroughly combined
-
Rinse the mushrooms and pat dry
-
Heat a frying pan over medium heat
-
Cook the bacon over low heat, then remove from the pan and cook the garlic and onion in the bacon grease until caramelised
-
Add the mushroom to the pan and cook over medium-low heat until soft
-
Add the eggs to the mushrooms in the pan, and cook over medium-high heat until it begins to set
-
While cooking, mix the eggs with a spatula to ensure even cooking
-
Serve the egg and mushroom mixture with the bacon

Sprinkle a little Himalayan rock salt over the top for to aid digestion

My EGGceptional French Omelette
PREP TIME 5 mins
COOKING TIME 10-30mins
INGREDIENTS
-
4 eggs
-
4 tbsp full fat cream (ideally French fresh Crème Fraîche)
-
Fine sea salt
-
1 tbsp butter
-
1/2 cup grated finely grated cheese, such as Gruyère, Emmental, Swiss, or cheddar (Gruyère is my favourite and the one I recommend if available to you)

1/2 onion
-
1 clove of garlic
-
1/2 cup of mushrooms, sliced
-
1/4 cup cherry tomatoes, sliced
-
1/2 cup of baby spinach
-
1/2 cup diced ham
-
1 tsp dried oregano
INSTRUCTIONS

Whisk together eggs cheese and cream in a bowl. Season with salt
-
Heat the butter over medium heat in a frying pan. Caramelise the onion and garlic then add mushrooms, tomatoes, baby spinach, ham and oregano. Fry for a few minutes more
-
Carefully pour the egg mixture and lower the heat. Cook for a few minutes without stirring
-
Fry one side and When the egg mixture starts to set (it can still be quite loose on top, but not too loose), turn flip and Fry for a few more minutes
-

If you’re feeling ambitious, why not make and use some Ghee (clarified butter), in place of normal butter. This was something I have added to my diet since living in an Ashram in India, as it’s great for digestion, as well as rich in antioxidants

1 tbsp. Rosemary

12 slices bacon
-
1 cup grated finely grated cheese, such as Gruyère, Emmental, Swiss, or cheddar (Gruyère is my favourite and the one I recommend if available to you)
INSTRUCTIONS

In a large bowl, whisk together eggs and season with salt and pepper
-
In a frying pan over medium heat, melt butter
-
Add eggs and scramble, 3 minutes, then stir in rosemary
-
On a cutting board, lay out two strips of bacon next to each other (each roll-up is made out of two slices of bacon rolled next to each others)
-
Sprinkle the bacon strips with cheese and top with a spoonful of scrambled eggs
-
Roll up very tightly so the roll remains closed when cooking in the pan.

Repeat with remaining bacon strips, cheese and eggs
-
Delicately place the bacon roll-ups seam side down on the frying pan
-
Cook until crispy on all sides
-
Enjoy!
